The Georgium is a small biodynamic vineyard with seven rooms and one suite on the shores of Lake Längsee in Carinthia. Guests stay amidst vineyards and woodland, swim in Lake Längsee in the mornings, enjoy farm-to-table cuisine and natural wine from our own production in the evenings, and explore walking and cycling trails right on our doorstep. We run the Georgium as a family and as a working farm. The vineyard, the guest rooms and the kitchen did not develop independently of one another. Everything is an expression of the same idea: to create a place where farming, hospitality and time are intertwined.

Authenticity, honesty, responsibility

Values that form the foundation of our young, biodynamic winery in the sunny south of Austria. Here on the northern shore of Lake Längsee, we focus exclusively on the Burgundy grape varieties: Chardonnay, Pinot Blanc and Pinot Gris, Pinot Noir. The result is a white cuvée and a Pinot Noir, available as either sparkling or still wine. These distinctive, characterful wines from one of Austria’s most exciting cool-climate regions are enjoyed by connoisseurs both locally and far beyond the country’s borders.
Our philosophy is to capture the essence of the grape and the terroir in the wine, without any technical interventions that might distort the flavour. Following a long, spontaneous fermentation on the skins, the wines are aged for between 12 and 48 months in large oak barrels and ceramic vessels. We believe in the responsibility we bear for our environment, for the land on which we stand, and for the people with whom we live.

We are also passionate about the old orchard meadows with their native varieties of pears and apples used for cider. Our Speckbirnen sparkling wine and our hop-infused apple cider, "Hopfel", are exciting, low-alcohol surprises.

FAQ

We are an organic winery and we are delighted to offer you the chance to taste our products. On request, we can organise guided tastings of our organically produced wines, sparkling wines and fruit wines. We’ll tailor our culinary offerings to your individual preferences, working in line with our farm-to-table philosophy.

Our farm-to-table concept means that, wherever possible, we cook using organic produce from our own farm as well as from small and micro-producers in the region. The menu is based on the season and whatever nature has to offer at the time. What’s more, our „signature dish“ is our homemade lamb or venison bratwurst – because anyone can cook with the prime cuts. We serve this delicacy with a variety of seasonal side dishes. We always offer alternative delicacies for vegetarians and vegans as well.

Yes. Our restaurant and wine-tasting sessions are also open to day visitors, subject to availability. We would appreciate it if you could book in advance.

Our kitchen uses organic, seasonal produce. We are happy to cater for vegetarian and other dietary requirements by prior arrangement.
