Around 60% of the vineyard is planted with Chardonnay, Pinot Blanc and a little Pinot Gris. In the centre and underhand, sandy loam on lime-free soil lends herb-rich aromas.

The soil's fulvic and humic acids determine the characteristic salinity and tannin structure. Different batches of grapes from the upper, middle and lower slopes are harvested and processed separately. After one year at the earliest, it is decided which barrels will yield the white vintage cuvée and provide the annual testimony.
